Nestled in the hills of Apaneca, Ahuachapán, the Cerro Las Ranas farm—named for its lagoon filled with singing frogs—embodies the meticulous care of the Salaverria family, founders of JASAL Coffee. Led by José Antonio Salaverria and his sons, the team oversees every stage of production, from harvest to cupping, crafting coffees that reflect both heritage and precision.
This Honey-processed lot, composed of multiple varieties including Bourbon and Pacamara, begins with hand-selected cherries that are pulped and left to dry on clay patios under the Apaneca sun, still wrapped in their golden mucilage. The result is a clean, rounded cup with notes of lemonade brightness and sweet praline richness—a balance of freshness and comfort that defines the best of Salvadoran craft.
