Blending modern agricultural engineering with traditional Colombian craft, his Yellow Honey Castillo undergoes a 168-hour fermentation—96 hours in cherry and 72 in mucilage—before slow honey drying. The result is a vibrant, fruit-forward coffee with tropical fruit sweetness, honey depth, and soft notes of cherry and caramel.
Juan David’s innovative approach is matched by his commitment to people and place. Los Cedros empowers local youth through training and fair pay, while implementing sustainable practices that conserve water—saving up to 39 liters per kilo compared to traditional washed coffees.
