The Story of Coffee

Coffee’s story begins in the highlands of Ethiopia, where legend tells of a goat herder named Kaldi who noticed his goats becoming unusually energetic after eating bright red coffee cherries.

While the legend may never be proven, Ethiopia is widely recognized as the birthplace of coffee. From there, coffee spread throughout the Arabian Peninsula before reaching Europe and eventually becoming one of the world’s most beloved beverages.

Today, coffee is grown across what’s known as the Coffee Belt, a region surrounding the equator where climate and elevation create ideal growing conditions.

Chapter 2

Coffee Is a Fruit

This surprises most people.

Coffee doesn’t grow as a bean.

It grows as a small fruit called a coffee cherry.

Inside every cherry are two seeds.

Those seeds are what we know as coffee beans.

Just like peaches or cherries, coffee fruit ripens over time before being carefully harvested.

Chapter 3

Processing

Once a coffee cherry is picked, the fruit surrounding the seed needs to be removed. The way that’s done is called processing. It’s one of the biggest factors that influences how a coffee tastes.

Washed

The fruit is removed before the coffee is dried.

Expect: Clean, crisp, and bright flavors.

Natural

The whole cherry dries with the fruit still surrounding the seed.

Expect: Sweet, fruit-forward, and jam-like flavors.

Honey

Some of the fruit is removed, while a sticky layer remains during drying.

Expect: Balanced sweetness with a smooth, syrupy body.

Anaerobic

Coffee cherries ferment in sealed, oxygen-free tanks before drying.

Expect: Bold, expressive flavors with vibrant fruit and unique complexit

Chapter 4

Coffee Varieties

A coffee variety is a specific type of coffee plant. Just as every producer, farm, and origin is different, so is every variety. Each one has its own genetic makeup, influencing how it grows and the flavors it naturally develops.

Chapter 5

From Farm to Roaster

Once coffee has been harvested, processed, and dried, it’s carefully milled to reveal the green coffee bean.

At this stage, the coffee hasn’t been roasted yet.

It’s packaged and shipped from origin to roasters around the world, where its next chapter begins.

Chapter 6

Roasting

Roasting is where green coffee transforms into the coffee you know and love. Heat unlocks the sugars, aromas, and flavors that have been developing since the coffee was first grown.

Chapter 7

Brewing

Brewing is the final step in coffee’s journey. The same coffee can taste completely different depending on how it’s brewed. Each method highlights different characteristics, giving you a new way to experience the same coffee.

For example, the Pour Over.

A pour over is a manual brewing method where hot water is carefully poured over freshly ground coffee, allowing it to filter slowly into your cup.

At Goldchild, every pour over is brewed to order using recipes developed specifically for each coffee.

By controlling every variable, from grind size and water temperature to pouring technique and brew time, we’re able to showcase the unique flavors shaped by origin, variety, and processing.
