At Finca La Señora in Chinchiná, Caldas, Jorge Uribe and his son Sergio approach coffee with a mix of precision, patience, and purpose. Their Red Honey Castillo begins with carefully handpicked cherries, fermented using yeast cultivated on the farm, then dried with the sticky mucilage intact to draw out its signature sweetness. The result is a layered, fruit-forward profile—honey and tropical fruit upfront, finishing in notes of grape and caramel.
True to its experimental spirit, La Señora’s process also reimagines sustainability. Their honey method uses as little as one liter of water per kilo of parchment coffee, conserving local resources while supporting the elderly and women who make up much of their harvesting team. Each lot reflects not only innovation but a deep respect for craft, people, and place.
