His Wush Wush, a rare Ethiopian variety reborn in Colombian soil, undergoes 150 hours of anaerobic natural fermentation before being dried in cherry on African beds. The result is deeply aromatic and complex: cacao nibs and chamomile meet yellow tropical fruits, brown spice, and currant sweetness.
